From CNN – Kendra Bowen, Anheuser-Busch Global Yeast Manager, spoke with CNN about how and why the taste of Budweiser remains the same as it did when the beer originated. To ensure the quality and taste of Budweiser products, a strain of yeast that dates back to the 1800s is used throughout the entire brewing process. The master strain, which is kept cryogenically frozen in liquid nitrogen at Budweiser’s main brewery in St. Louis, is extracted for use one milliliter at a time. Once the yeast has thawed, it is then grown into 100 barrels of fresh yeast, where it is kegged, packed with ice and shipped to breweries across the world. “The strain is about A-B’s heritage and brewing process,” said Bowen. “The quality of that strain is the quality of Budweiser.”
