Bavaria is a Dutch brewery founded in 1719 by Laurentius Moorees in Lieshout, North Brabant. Jan Swinkels, the founder’s great-grandson, took over the brewery and expanded production and distribution. The Swinkels family still owns the brewery today. By 1924 the brewery had become too small, and a new brewery was built and in 1933 the brewery added a bottling plant, which produced 2,000 bottles per hour. In 1910 a malting plant was built, which still produces malt for Bavaria and other breweries. The brewery produces a range of standard and low alcohol pale lagers under a variety of brand names including Bavaria and Hollandia. It’s great to break the routine from time to time. Brewed independently, Bavaria goes its own way. Always challenging the accepted.

John Johnstone took ownership of the site in 1719, and under his ownership the brewery started brewing for commercial sale. 1815 saw the end of the Johnstone dynasty when Ellis Dudgeon married into the Johnstone family. For nearly 150 years the brewery traded as Dudgeon & Co, which produced a wide varieties of ales. By the 1970s the malting side of the business, which had seen the company through two world wars, was feeling the strain of competition from modern automated plants. In 1972, family ownership ended as the business was sold. But this end was just the beginning of a vibrant twenty-year period of significant growth for Belhaven. In 1993 a buy-out led by Stuart Ross enabled the management team to further expand and develop the business. In 2005 Belhaven was bought by Greene King and continues to brew of a wide variety of award winning ales.

By the Dutch's Batavia Arrack is a distillate based on 100% sugar-cane molasses, produced exclusively on the island of Java, Indonesia, dated back to the 17th century. The fermentation process includes the addition of local (red) rice; it is this, which sets it apart from Rum, although the base material is still sugar-cane. Distillation of the Batavia Arrack is carried out using very traditional Pot stills, adopting ancient Chinese distillers’ methods. By the Dutch's Master Blender creates an excellent product, aged in oak barrels up to 8 years, resulting in fantastic rich and deep flavors, lingering on the palate.

Sotol is a Mexican ancestral distillate, with an identity of its own. A relative of both tequila and mezcal, the main difference is the botanical family to which each one belongs to. Unlike those products, Sotol is not distilled from agave, but from the Sotol bush of the family Asparagaceae that grows wild in the desert. The wild-grown, prickly evergreen plants can take as long as 15 years to mature, storing vast amounts of natural energy before they are ready to be harvested by the ‘jimadores’. One large, magnificent plant will produce but a single bottle of Sotol Coyote. The main Sotol growing regions of Mexico are found in the dry desert lands of Chihuahua, Durango, and Coahuila.

In 1902, Leon Huyghe settled in Melle. Barely four years later, in 1906, he bought the brewery, which he named Brouwerij-Mouterij den Appel. The story of Dogfish Head began in June of 1995 when we opened Dogfish Head Brewings & Eats, the first state’s first brewpub opened in the resort beach community of Rehoboth Beach, Delaware. The plan was to bring original beer, original food, and original music to the area. Not only was Dogfish Head Delaware's first brewpub, it was the smallest commercial brewery in America. Our very first batch, Shelter Pale Ale, was brewed on a system which essentially was three little kegs with propane burners underneath. Brewing 12-gallon batches of beer for a whole restaurant proved to be more than a full time job. When the doors to the pub first opened, we brewed three times a day, five days a week! The one benefit to brewing on such a small system was the ability to try out a myriad of different recipes. We quickly got bored brewing the same things over and over - that's when we started adding all sorts of weird ingredients and getting kind of crazy with the beers! Off-centered ales, for off-centered people - that's what they do at Dogfish Head! Whether its weird ingredients, super-strong extreme beers, or crazy, made-up styles, you can be sure that a beer from Dogfish will challenge your perceptions of what beer is supposed to be! Most of Dogfish Head beer is bottled and kegged in Milton, Delaware brewery, but they also have a small brewery in Rehoboth Beach, Delaware, which is where they do all of their experiment batches. Dogfish Head brews are distributed across the United States.

Starches are converted to sugars, which brewers refer to as wort and distillers call wash. The product is then fermented to create beer. Whiskey requires a couple of additional steps. The beer is distilled to increase the proof and the distillate is then barrel-aged to create whiskey.

 

The Foundry team has been collaborating with various breweries for many years, and we came up with an idea. Why don’t we use the recipes for some of our favorite beers and further process these into whiskey? The Brewer-Distiller Alliance was born.

The key to building interest in craft beer was to allow consumers to watch the brewing process – while providing them with the experience of enjoying a wide variety of distinctive beers that had been produced on-site. Goose Island’s brewers set to work crafting a diverse selection of unique beers – and on Friday, May 13, 1988 the Goose Island Brewpub was born. It turned out that John was right; Chicagoans palates evolved rapidly once Goose Island’s Brewpub opened its doors and introduced the city to distinctive craft beer. By 1995, the brewpub had become so popular that John Hall decided to open a larger brewery and bottling plant to keep up with demand. Finding still more room for growth, in 1999 Hall opened a second Goose Island Brewpub just a stone’s throw away from historic Wrigley Field. Today, Goose Island continues to brew an innovative selection of over 50 craft beers at the brewpub, the best of which are then bottled at our Fulton Street brewery.

In 1998, George Rowley discovered absinthe while living in the Czech Republic. At the time, absinthe was a near-forgotten relic and was only available in a few Bohemian bars. Inspired by his experience, George and his company Bohemia Beer House Ltd (now BBH Spirits) took on the task of setting the legal precedent for absinthe, opening the international absinthe market today.

 

After soon discovering the UK never imposed a ban on absinthe, working alongside Trading Standards, George was able to secure permission to import due to the creation of a document called EU Council Directive 88/388/EEC. Creating this watershed document set the legal precedent for all future absinthe in Europe and the international market which now includes the United States. George Rowley held his UK launch in London on November 1998, the product being a modern Czech absinth, absinthe spelled without the ‘e’, and introducing to the market the now popular modern ‘sugar and burn’ ritual. In May 1999, the campaign to source a genuine pre-ban absinthe and restart distilling in France began when George contacted Marie-Claude Delahaye, world-renowned expert and historian on the category.

 

THE RESURRECTION While reviewing the terms of the 1915 French ban, it was discovered that the French had prohibited the selling of absinthe in France, but not the distillation of it. This would signal the rebirth of traditional French absinthe, distilled with Grand Wormwood (Artemisia absinthium). All this pioneering work was carried out by George and Marie-Claude at the Paris distillery, leading up to the introduction of the first traditionally distilled absinthe in France, La Fée Absinthe Parisienne. After a year of investigation, research and development, the very first order of La Fée Absinthe Parisienne was placed on May 1, 2000. The iconic eye motif has made La Fée the benchmark brand within the surging absinthe category.

The Chicago contingent initiated the brewing and the gravitational effect of its suchness did the rest. We all loved the beer but the mission was larger than the ordinary joy of a hoppy-sweet quaff. It was driven unseen by an urge to communicate with people, to find our diasporidic tribe, and to connect with other souls adrift on a culture that had lost its center and spun its inhabitants to the four winds to wander lost and bereft with a longing to re-enter the light. Beer, we have learned, has always been a good lubricant for social intercourse! The Lagunitas Brewing Co. was not so much an act of ordinary "foundling" as it was willed into being by the unspoken desire of supportive beer-lovers in Northern California after which they continued to nurture their creation and urged us forward to fulfill the unifying needs of that same beer-loving diaspora from coast to coast and beyond. It is good to have friends!

Seven generations ago, in 1809, the Lindemans family owned a farm in Vlezenbeek near Brussels. They decided to intensify Lambic brewing activities during winter, when less farm work had to be done. The farm produced wheat and barley, the raw materials of the Lambic. Due to the growing success of the Lambic, the brewery became more important and consequently, in 1930, the farm-activities were stopped. In 1978, Lindemans started the production of Faro, after a period during which it almost disappeared from the market. The Framboise was launched in 1980 and due to the success of the fruit-beers, they created 2 new beers: Cassis (black current beer) in 1986 and Pecheresse (peach beer) in 1987. In 1991 the Lindemans family decided to build a new brewery next to the old one to meet the growing needs of the market without a loss in quality. A dedication to perfection has resulted in numerous accolades and awards. And in 1985, beer expert Michael Jackson exclaimed the Lindemans Kriek as one of the five best beers in the world.

The saturnalian saga of the Magic Hat Brewing Company began in 1978 in a Goddard College bathtub, where future brewmaster Bob Johnson first cultivated his maniacally obsessive interest in making “better beer with bigger flavor.” After fifteen years in various non-ale trades, Bob returned to this first fermentational love and made the decision to go pro on Martha’s Vineyard, an island sadly bereft of breweries. It was then, in a moment of supreme serendipity, that Fate sent him off to an accidental meeting on a random Burlington street with future Magic Hat president Alan Newman. Once both neighborhood acquaintances and coworkers at Seventh Generation, an environmentally friendly cleaning product company, the two had crossed paths many times but hadn’t talked for ages. Light pleasantries were exchanged, and upon hearing of Bob’s plans, Alan offered to help him open a brewery in Burlington. Before you could pour a pint, the two were road tripping through the Pacific Northwest, crash-studying the industry and scheming with a New England brewer to bottle Bob’s very first original ale. Seeking some mash tuns and tubes they could call their own, the pair moved into an abandoned Burlington factory in 1994, finally settling into a much larger (and currently expanding) facility near Lake Champlain’s Bartlett Bay in 1997.

Produced in the Mexican state of Zacatecas, which is much farther north than Oaxaca, where the center of mezcal production is. The distillery uses virgin, local oak in order to impart honey flavors and further tame the wild, agave character of the spirit. The agaves crafted here are not smoked and show a much more stately character to the wild, smoky spirits made further south in Oaxaca.

Casa Miel de Tierra follows recipes that have been handed down for generations. These preserve the raw flavors of the ingredients used in mezcal making: the sweetness of the agave and the robustness of the white oak.  The end result establishes a different kind of mezcal, one that dares to replace the strong and smoked flavors of classic mezcals (which only interfere with the purity of its true taste) with the naked essence of the very best ingredients used in its crafting. What is left behind is an extremely smooth distillate, with remarkable wooden notes and exquisite aroma.

Five generations later the Moretti name still graces the label of the authentic Italian beer across the world.

Throughout the long history of Orval, there has probably always been a brewery at the monastery. Various facts corroborate this idea: topographical references on old drawings, a detailed description of production left by a Franciscan visitor three hundred years ago, and an area called the "hop-field" very close to the monastery. Brewing beer was customary in these areas little-suited to vine-growing. Beer was first and foremost considered for its nourishing properties: it was called "liquid bread." The origins of this distinctive beer can be attributed jointly to Mr. Pappenheimer and to the Belgians, Honore Van Zande and John Vanhuele who were working in the brewery at the same period. They were daring; their combination of production methods is nowhere else to be found. Several of these methods, such as infusion brewing and "dry-hopping" are English. The result is a beer with characteristic aroma and a taste owing more to the hops and yeasts than to the malts.

Aromatique is an apothecary bitter category originating in Neudietendorf, Thuringia in 1828 by the pharmacist Daniel Thraen. The 100% spice-based bitter was created to aid in a stomach illness epidemic. With rising popularity, Th. Kramer & Co factory was founded in 1876 producing an Aromatique among other products. By 1945, there were five existing Aromatique factories, which were subsequently nationalized as part of the Soviet Occupation Zone. When the two Germanies reunited, the Soviet Union listed the companies for sale to private parties. Lutz and Marina Sanders purchased Th. Kramer & Co. Today, the Sanders family operates the only surviving Aromatique, thus trademarking the category as the name of their brand.

It began in 1979 when home brewing was legalized in Oregon. Having trouble finding beer in the U.S. that they liked to drink, brothers Kurt and Rob Widmer began making beer for themselves and their friends. After quitting their jobs in 1984, the Widmer brothers decide to turn their hobby into a vocation and open their own brewery. They pulled all of their resources together and built the Widmer Brewing Company in NW Portland. The brothers started by brewing Altbeir, meaning “Old Beer” in German, and a Weizenbier, their interpretation of a filtered wheat beer. Asked by the owner of the local Dublin Pub for a third beer for him to serve, the American-Style Hefeweizen was born by leaving the Weizenbier unfiltered resulting in a cloudy appearance. The Widmer Brothers Brewing Co., renamed in 1990, now resides in North Portland and continues to make one of America’s most popular wheat beers, the American-style Hefeweizen.

A long time ago, way back in 1990, there was a little winery in the town of Proctorsville, Vermont. Back then, we made our living producing a variety of apple wines, something not many wineries do. We also made a little cider called “Vermont Old-Fashioned Hard Cider” – not the most catchy name, yet pretty darn appropriate. The Vermontiest of Vermonters are sometimes called “woodchucks” and this seemed like a pretty good name for our newest small-batch, Vermont-based cider. As you may know, the new Woodchuck cider tasted pretty darn good, and it quickly found distribution. Soon, our winery-turn-cidery was struggling to meet the demand for the cider. The early bottling line didn’t help either. Throughout all of Woodchuck’s years, a lot of things have changed. What’s even more surprising is the stuff that’s stayed the same. Like our cider recipes. We’ve figured out smarter ways to get them in bottles, but the ingredients and taste are exactly the same. More importantly, many of the same folks from the little Proctorsville Winery still make Woodchuck today.
