Brooklyn Brewery chef Andrew Gerson talks about his 10 years of culinary experience and gives tips on how to bring beer into the kitchen.
C&L: What’s one thing about beer that most people overlook or need more education on?
Andrew Gerson: It’s how beer enhances the meal. There’s really a great beer for any dish. There’s versatility in the breadth of styles in the beers that we have at Brooklyn Brewery. How beer can nhance an overall eating experience.
C&L: What’s the key to finding the perfect beer to pair with your meal?
Andrew Gerson: First, experimentation. The more you know, the more you taste, [and] the better you are at finding a great pairing. You can always find a better pairing, and you can always improve dish. Every time I finish a dish and I think, “It’s perfect; it’s great,” I want to add or subtract something to enhance it. How does it contrast? Does the carbonation bring out the flavor? All of these come together to create the perfect pairing.
